Ingredients
Chicken
- 3 skinless chicken boned pounds, cubed
- 2 tablespoons flour
- 1 ½ teaspoons smoked paprika
- ½ teaspoon pepper
- ½ teaspoon salt
- 2 tablespoons olive oil
Sauce:
- 4 cloves garlic, minced
- ½ cup sun-dried tomatoes which have been soaked in olive oil
- 1 tablespoon tomato paste(non – organic if possible) or organic tomato passata can also be used.
- ¼ teaspoon red chili paste – optional if you want your dish spicy
- 1 teaspoon Italian seasoning
- 1 cup chicken stock
- 1 cup heavy cream
Pasta and Greens:
- 20 ounces tortellini fresh, frozen, of dried
- 2 cups baby spinach
- ¼ cup fresh basil
There is going to be one cup preparation for Parmigiano cheese, grated.
Cooking Instructions
👉 Season and Coat the Chicken:
Rub the chicken pieces with flour, smoked paprika, salt and pepper and place into a bowl. Turn well till the chicken pieces are well coated with the marinade.
👉 Boil the Pasta Water:
In a large pot, boil the tortellini with water so that it can be cooked properly. By the time the water is boiling it is also time to prepare the sauce.
👉 Pan-Sear the Chicken:
In a large skillet, melt 2 tablespoons of olive oil, suited to medium heat. Put the coated chicken pieces in to the oil in a single layer. Cook for 7-8 minutes on the one side and as soon as they splash, turn them over and fry the other side until they are golden brown. Take out the chicken and move it to one side and let it cool.
👉 Saute Aromatics:
I add the remaining olive oil in the same skillet used, and. Finally stir in minced garlic and allow it to fry for thirty seconds until its aroma is released.
👉 Make the Sauce Base:
Stir in the sun-dried tomatoes, tomato paste, if using red chili paste and Italian seasonings. Mix them thoroughly and fry for a minute to allow flavors to come out.
👉 Deglaze the Pan:
Add the chicken stock and deglaze the pan by stirring around with whatever bit is stuck at the bottom of the pan. Leave the mixture to cook for 2 minutes with the heat turned on.
👉 Cook the Tortellini:
To boil water, put salt with the water boiling: this should be 2-3 spoons of salt. Before cooking the tortellini, follow the directions at the back of the pack. If you are using fresh tortellini it cannot be boiled for long periods, a simple simmer will just be enough.
👉 Combine Chicken and Cream:
Place the chicken back into the pan and simmer. Then add the heavy cream and mix it properly. This should be left to cook on a low heat to allow the flavors diffuse.
👉 Add the Tortellini:
When it is time to finish the dish the tortellini should be cooked to the al dente stage, after which the liquid it was boiling in should be drained, before the tortellini is added to the sauce with the corn and butter. Stir to cover the base of the pasta with it. Season the sauce and smooth it out with some of the pasta water you set aside if it’s too thick.
👉 Season and Add Greens:
Spoon some sauce up and give it taste then add salt then pepper as needed. Remove from heat and stir in the baby spinach, fresh basil and the grated Parmesan.
👉 Serve:
Spoon the pasta hot with extra amounts of Parmesan and serve with basil leaves. This dish however, is best served immediately, with a silky smooth sauce, and still warm.
