Ingredients:

For the Chicken Steak:

  • 2 Chicken Breasts
  • Finely chopped 5 to 6 Garlic Cloves
  • 1 tbsp Cooking Oil
  • 1 tsp Black Pepper Powder
  • 1/2 tsp Salt
  • 1 tsp Dark Soy Sauce
  • 1 tsp Tomato Sauce
  • Kashmiri Red Chili Powder / 1 tsp
  • Crushed Dried Red Chilies 1 tsp
  • 1/2 tsp Oregano
  • 1 tbsp White Vinegar
  • 1 tbsp Butter
  • For the Boiled Vegetables:
  • 1/2 cup Boiled Carrot
  • 1/2 cup Boiled Broccoli
  • 1/2 cup Boiled French Beans

For the Potato Wedges:

  • 2.5oz potato wedges approx 1 medium sized potato
  • 1 medium-sized Tomato (diced)
  • 1/4 tsp Salt
  • 1/2 tsp Black Pepper Powder
  • 2 tbsp Butter

For the White Garlic Sauce:

  • 1 tbsp Chopped Garlic
  • 2 tbsp All-Purpose Flour
  • 1.5 cups Milk
  • 1/4 tsp Salt
  • 1/2 tsp Black Pepper Powder
  • 1/2 tsp Chili Flakes
  • 1/2 tsp Oregano

Step By Step Guide

Step 1: Prepare the Chicken Breasts

  • Tenderize the chicken breasts: Lay chicken breasts between two sheets of plastic wrap or parchment paper, and gently (without disturbing plastic wrap) place meat mallet or rolling pin on top and pound to even thickness. The chicken also cooks evenly this way.
  • Season the chicken: Blend black pepper, salt, dark soy sauce, tomato sauce, Kashmiri red chili powder, crushed dried red chilies and oregano in a small bowl. You rub this marinade on both sides of the chicken breasts and let them marinate for at least 15 minutes.
  • Cook the chicken: In a large skillet heat 1 tbsp of cooking oil and 1 tbsp of butter over medium high heat. Melt the butter and put it to sizzle when it is melted, then add the marinated chicken breasts to sizzle. Place the chicken breast in a hot pan and cook for about 4-5 minutes on each side, until the chicken breast is beautifully browned and cooked through. Set the chicken aside, remove it from the pan.

Step 2: White Garlic Sauce preparation

  • In the same skillet, toss 1 tablespoon chopped garlic, cook for 1 minute or until fragrant.
  • Make a roux, add 2 tbsp of all purpose flour and stir continuously. Then cook for about 2 minutes making sure it doesn’t burn.
  • Stir in about 1 1/2 cups of milk to the flour mixture, little at a time, constantly to avoid lumps. Stir until sauce thickens and becomes smooth.
  • Salt, black pepper powder, chili flakes and oregano. After which, your sauce should be creamy and seasoned well. If you add more milk you can adjust the thickness.

Step 3: Vegetable preparation and potato wedge prep.

Boil the vegetables: For example, if you haven’t already, steam or boil the carrots, broccoli, and French beans until tender but bright in colour.

Cook the potato wedges: Also heat 2 tablespoons of butter in a separate pan and a add the potato wedges. Chop them with salt and black pepper and cook them over medium heat until golden brown and crispy on all sides. Set aside the wedges taken off the pan.
Then toss cooked potato wedges in the same pan for a more flavorful touch. Quickly sauté the diced tomato in same pan for 1-2 minutes, until softened, and then toss it with with the cooked potato wedges.

Step 4: Assemble the Dish

  • Once cooked, place remaining a chicken steak on a plate drizzle with a splash of the creamy white garlic sauce.
  • Boil some vegetables (carrot, broccoli and French beans) and arrange them around the chicken.
