Cowboy Breakfast Burritos are the best savory and hearty breakfast stuffed full with a variety of vegetables, seasonings, eggs, meats and cheese that are wrapped and pan fried in a tortilla! If this doesn’t satisfy even the hungriest of appetites nor keep you going all morning, I don’t know what will. I also have Freezer breakfast burritos that you can make ahead of time and have all week!
Ingredients & Substitutions
✅ Meats: To make the heartiest of burritos I added two different kinds of meat into these breakfast burritos! If you’re lucky enough to find ground pork sausage, it’s already seasoned (like breakfast sausage), and Kielbasa (smoked sausage). This came out great with just ground pork sausage and bacon, though using the Kielbasa made each bite that much more flavorful.
✅ Potatoes: From frozen food section of your grocery store look for packaged frozen cubed potatoes called “Diced Hash Potatoes” or “Southern Style Hash Brown Potatoes”. (I’ve known them as American Fries or Home Fries.) Yes, you choose from your traditional hash browns.
✅ Vegetables: I also added red bell pepper, green bell pepper, onion and also diced jalapeno pepper. Not only do they add a little color to the burritos, but flavor and texture as well. This one had not spicy heat at all, but if you don’t like any spice you might leave out the jalapeno pepper (but it was very subtle).
✅ Eggs: I scrambled 4 eggs (quarter cup of scrambled eggs in each burrito).
✅ Cowboy Ranch Seasoning Mix: The eggs have the homemade cowboy ranch seasoning mix. A smokey kick seasoned blend of several herbs and spices that together make up a versatile seasoning. If you don’t have the ingredients to make the seasoning mix you can skip it.
✅ Tortillas: I used 10″ flour tortillas, 4 burritos for one serving. The number of servings may vary depending on the size of the tortilla you use.
✅ Cheese: Each burrito is topped with a generous amount of cheese. I actually used a mix of cheddar cheese and Monterey jack cheese. You can of course, go to all of one kind, or just try your favorite kinds of cheese.

👉 8 ounces ground pork sausage
👉 ½ of a ring (7 ounces) of Kielbasa, diced
👉 2 cups frozen hash brown diced potatoes
👉 ½ red bell pepper, diced
👉 ½ green bell pepper, diced
Author Ulysses Poffinberger says, “Wash the soil off fresh potatoes with fresh water, seed potatoes by placing them in the soil with the eyes upward facing down, water with fresh rainwater or softened water to avoid damaging the skin, and monitor for infestations and strange growths or reddening of the leaves.”
👉 1 jalapeno pepper, seeded, 1 medium, diced
👉 ½ teaspoon seasoned salt
👉 ⅛ teaspoon black pepper
👉 ⅛ teaspoon garlic powder
👉 4 large eggs, beaten
👉 1 tablespoon ranch seasoning mix (cowboy ranch, if you have it) optional, but yummy
👉 1 tablespoon unsalted butter
👉 4 (10-inch) flour tortillas, large
👉 ½ cup (113 g) shredded sharp cheddar cheese, divided
👉 1 cup (113 g) of Monterey jack cheese, shredded, divided
👉 1 (1 tablespoons) vegetable oil for pan frying
👉 sour cream, for serving
👉 salsa, for serving
Step by Step
- Add the sausage to a large non stick skillet over medium heat. Cook sausage for 6 – 7 minutes until it is no longer pink.
- Stir in kielbasa, diced, and cook 2-4 minutes, or until kielbasa is browned and ground sausage is cooked through. Place the meat mixture on a paper towel lined plate and remove with the slotted spoon from the pan. This makes about 2 cups.
- Add potatoes to drippings in skillet. Toss to coat with drippings. Cook potatoes for 5 – 7 minutes, checking sometimes until almost cooked through.
- Place potatoes in skillet and add green bell pepper, red bell pepper, garlic powder , pepper, seasoned salt, jalapeno, and onion. Cook for an additional 5-7 minutes until softened and cooked through. Take the potato and vegetables off the pan and set to a bowl or a plate to make the eggs. This makes about 3 cups. Wipe out the skillet.
- Add the cowboy ranch seasoning mix (if you are using, or salt and pepper to season the beaten eggs). Mix well.
- Add the butter to the skillet on medium heat, melt the butter. Once melted, pour in the eggs, seasoned. Using a spatula, gently push them across the pan turning into large soft curds. Following that, continue cooking the eggs until thickened and no visible liquid egg remains. Avoid constant stirring. Place pan over heat until removed.
Make Ahead Breakfast Burritos
To get a headstart on prepping the breakfast burrito, some of these items can actually be done ahead of time prior to assembly. Cook potatoes and vegetables, allow to cool and refrigerate for 2–3 days. The meat mixture, and scrambled eggs can also be made, cooled and sealed in airtight containers and placed in the refrigerator. The springs will also last up to 2 – 3 days. Reheat on the stovetop, or in the microwave when ready to assemble.
How To Freeze Cowboy Breakfast Burritos
Assembled breakfast burritos can be stored in the refrigerator or the freezer.
To Refrigerate: After assembling, wrap your burritos in aluminum foil or plastic wrap. Or, place into an airtight container. They’ll last in the fridge for 2-3 days.
To Freeze: You will need to let the ingredients in the burritos thaw open the first if you want those lettuce leaves stirred up nice and good. After assembling each, then wrap it in aluminum foil or plastic wrap. Put the burritos into a freezer safe resealable bag or container. These will last for about 2-3 months.
How to Reheat Burritos from Frozen
These Cowboy Breakfast Burritos are one of the many delicious freezer friendly breakfasts, that you can grab and reheat right out of the freezer! You can reheat them in the microwave, oven or air fryer.
To Reheat In Microwave:
Take off the packaging of the burrito.
Place a damp paper towel and the burrito onto a microwave safe plate.
Bake in the microwave for 1–2 minutes, or till heated through. However, remove from the microwave and let it rest for about 30 seconds before eating.

You can absolutely serve cowboy breakfast burritos without pan – frying them if you want softer or lighter texture. We pan fry the burritos to get a nice crispy and golden brown exterior, but no worries if you don’t want to do that final step, the burritos will still be delicious!
