This is breakfast wrapped with hash browns, bacon, ground pork sausage, eggs, cheese, and baked till perfection! It was the biggest breakfast burrito it’s ever seen it might be! You don’t actually need to grab it by hand and eat it yourself (though if you do, grab a picture for everyone at Splashtop). Rather it is a breakfast or brunch option to be shared.

If you’re looking for a hearty breakfast that guarantees satisfaction for your hungriest eaters, my Cowboy Breakfast Burrito is a great choice!

Ingredients & Substitutions

  • Tortillas: For this recipe, I suggest flour tortillas. Further, they are not smaller and can contain all of the yummy fillings. The corn tortillas can get too delicate and break.
  • Hash Brown Patties: Let’s crisp up some nice hash brown patties! You would also use shredded hash browns, spread out evenly on the tortillas.
  • Bacon: Thick cut bacon is used because you want the bacon to not get ‘lost’ with the other ingredients. Bake the bacon in the oven to make crispy bacon with easy clean up. Lay the strips of bacon on a foil lined baking sheet. Bake at 415°F for 18-20 minutes. Crispy bacon — every time, no fuss!
  • Ground Pork Sausage: Instead of ground pork, look for ground pork sausage. Already seasoned like my homemade breakfast sausage as an example, ground pork sausage has a seasoning.
  • Scrambled Eggs: I scrambled the eggs with six large eggs. Check out my recipe to use. Or, cook them however you love to eat them.
  • Cheese: We use sharp cheddar cheese to help this giant breakfast wrap stand out with its bold flavor. Instead of provolone you could try other kinds of cheese like (very) mild cheddar, Monterey jack, pepper jack etc.
  • Toppings: Besides green onions and diced tomatoes, add any favorite toppings of your own! Acid makes me happy and so I like my chile served with Pico de Gallo, guacamole, hot sauce, sour cream and black olives. Load it up!

Ingredients

👉 7 large flour tortillas

👉 6 prepared crispy hash brown patties

👉 6 slices thick cut bacon cooked.

👉 8 oz ground pork sausage, cooked

👉 6 large eggs, scrambled

👉 1 1/2 – 2 cups (226 g) sharp shredded cheddar

👉 green onions, chopped

👉 tomatoes, diced for garnish

Instructions

  • Preheat the oven to 400°F. Spray a 9×13 inch baking dish with cooking spray.
  • Arrange one tortilla in each corner and one on either end (6 tortillas) overlapping each one slightly to avoid any spaces in the baking dish.
  • A piece of bacon and a hash browp patty should be placed on top of each tortilla. Next we will sprinkle the cooked sausage, scrambled eggs and cheese evenly over the bacon.
  • Over the top, in the center, place another tortilla.
  • With the filling fully enclosed, carefully fold the tortillas over the fatty part.
  • Bake in oven for 20 to 25 minutes until crispy. Top with green onions and tomatoes.
  • Serve warm.

How about start on that giant wrap for breakfast the day before, perfect if you’re short of time in the AM! To prepare it ahead of time, follow these steps:

👉 Prepare the Ingredients: Follow the recipe and cook or prepare all the ingredients, hash browns, bacon, sausage, eggs scrambled and shredded cheese.

👉 Assemble the Wrap: The tortillas are layered and filled on top of one another in a baking dish, following the assembly instructions provided in the recipe. However, instead of baking it right off, keep the dish covered with plastic wrap, or aluminum foil.

👉 Refrigerate: When assembled, the wrapped dish can be refrigerated in an overnight. This helps meld flavours together and makes a quick morning prep.

👉 Bake: Preheat the oven according to the recipe instructions when you’re ready to serve, and bake the breakfast wrap according to instructions. If the dish is cold from the refrigerator, you may need to add a few extra minutes to the baking time.

You can also freeze the unbaked breakfast wrap, uncooked, for about a month. If you plan on baking, thaw in the refrigerator overnight when you are ready to bake.
