One-Pot Veggie Tortellini Soup: Comfort in a Bowl

A warm bowl of soup is just what I loved after a busy night, especially if it’s filled with lots of good for you veggies and cheesy Tortellini. Last night my kids were wanting pasta and I wanted to make sure my meal is balanced. This One Pot Veggie Tortellini Soup was right up my alley, cozied up, veggies galore and the MOST everything in one pot. This dinner is just the kind of simple, tasty meal you love to serve the family.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1/2 cup white wine (optional)
  • 6 cups vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 cups cheese tortellini
  • 1) Grated Parmesan cheese 1/2 cup
  • 1/2 cup heavy cream
  • 2 cups kale, chopped

Cooking Instructions

  • In a large pot heat the oil to medium on top of the stove. Then, add the diced onion, carrots, celery and mushrooms. Cooking the vegetables with the onions for about 5–7 minutes and until the vegetables are soft and the onions become translucent sautéed.
  • Then add the minced garlic, tomato paste, and the dried thyme. Add another minute and allow it to cook until fragrant.
  • If you’re using white wine, pour that in as well, and let it reduce slightly, 2-3 minutes.
  • Then add the vegetable broth, season with salt and pepper and bring to gentle boil.
  • Take the heat down and allow the soup to simmer for about 20 minutes to meld the flavors.
  • Add the tortellini and cook, stirring, according to package instructions; 4-5 minutes.
  • Add the Parmesan cheese, the heavy cream, the kale, lower the heat. Kale wilts, and all is combined well. Stir.
  • Enjoy a bowl of comfort, serve hot.

Serving Suggestions

Serving with a crusty loaf of bread, or garlic toast on the side. Add some extra Parmesan for an extra sprinkle of flavor.

Tips and Variations

If you’re not a fan of the taste of kale, you can replace it with spinach for a milder taste.

In case you’re on the path of vegan foods for some reason, plant based tortellini, and plant based cream instead of nutritional yeast.

For a little kick add a pinch of red pepper flakes.
